morning, noon or night quiche is right! This dense egg lie is packed with spinach and plenty of flavor. Pair of with a side salad for extra green. I really love using my homemade fire cider as a salad dressing for a spicy kick in the pants. Of course I had to wash it down with my Ningxia berry antioxidant bad ass juice.

its been a fun month of challenging myself to eat more green. I did it and stuck with for the vast majority of days. Some days I just didn't get to 3 meals so my snack choices (nuts, peanut butter and apples or trail mix) were not green. It is good to kick yourself in the pants every now and then. I hope to do it more often.

Kale yeah!

Head of kale, 1 Tbsp sunflower seeds, 2 Tbsp nutritional yeast, 1 garlic clove, juice of one lemon, 1/4 cup tahini paste and spices-2 teaspoons onion powder, 1 tbsp water, 1/4 teasp salt and optional 1/4 teasp cayenne pepper for kick or Sriracha to bite.

Rip all the leaves off the woody stem. Wash and dry those leaves well. They like to hold onto gritty sand and no one likes that kind of crunch. Compost those stems.

Add all the ingredients (except kale) into your blender and magically turn it into a paste. It will look like thick hummus.

First I coated the clean and dry kale leaves with about 1 teaspoon coconut oil. Then I massaged (with love) the paste from the blender all over that bowl of yum

Well coated with thick cheesy goodness but not dripping wet or it will be soggy.

I have a dehydrator so I lie the coated kale on the sheets leaving tons of room for air to circulate. You can also do on cookie sheets in the oven as long as you space the kale pieces out so it doesn't touch each other.

Looking good an hour into the drying process. In the oven, you will need to put the oven on your lowest setting either 180 or 200. Bake at that low level for about 2 hours. Try to flip the pieces over about 1/2 way thru. You don't want them to burn but they can't be left soggy so they really need to dry out in the baking process. They are just way easier in the dehydrator but totally doable in an oven!

Coleslaw can be quick, flavorful and always adds a tangy bite to your meal. My super smart and gorgeously glowing bestie Dr. Heather makes this in a jiffy. Here's what you need to grab:
½ head of green or purple cabbage (diced)
¼ cup of diced red onion
½ cup of shredded carrot
Dressing:
¼ cup of Veganniase (soy free) or mayo
1 Tbsp of lemon juice
1 Tbsp apple cider vinegar
2 tsp stevia or honey
½ tsp pepper
½ tsp salt

Mix together the ingredients for the coleslaw in a large bowl. Whisk together the ingredients for the dressing in a small bowl until smooth. Poor the dressing over the coleslaw and toss to coat. Refrigerate for at least an hour or two! Enjoy!

Today was another one of those crazy days where you're not sure you're even going to have time to eat. I preplanned and grab myself a Pacifica roll from whole foods. It is a delicious rice paper roll filled with veggies and raw tuna. There was a delicious wasabi sauce to dip the sushi in. Very filling and kept me Green today! Sometimes you gotta outsource your meals.

Broccoli Bites

Little nuggets of green love. A perfect texture for kids and strong on flavor for adults. Relatively Easy to whip up too.  Preheat your oven to 400deg. while you prep.
Grab a head of fresh broccoli. Wash, chop and quickly dunk in a pot of boiling water. After 2 minutes remove and plunge into a bowl filled with ice and water. This is called blanching. It allows the firmness, nutrients and color of the veg. to stay intact.
Put the cooked and cooled broccoli in the food processor and pulse until it looks like rice.  Don't turn on the food processor and walk away or it will turn to mush.  Pulse only.  Then add 1 egg, 1/4 cup cheddar cheese, 1/3 cup breadcrumbs (preferably panko), 1/2 teaspoon each salt and pepper and one fistful of parsley.  Pulse again to combine.  Take the mixture and pop it into a ziplock bag.  Cut the edge off the corner so you can sqeeze the goo from the corner.  It will come out like a log of broccoli lump.  Cut/chop into tater tot shape/size.  Make sure each one has space on the cookie sheet that is sprayed or has parchment paper or split mat to prevent sticking.  Bake for 10-12 minutes then remove the pan and flip each tot over.  Place back into the oven and continue to bake another 10-12 minutes until golden brown.  Excellent served hot but they firm up as they cool making it easier for little hands to grab and stuff in the mouth.

The world needs more peace. I know this isn't food but it is my version of medicine. I'm happy to share what I use to feel peaceful amid a lot of angst. Our brains “reward” us by releasing serotonin and endorphins when we eat sugar or other refined carbs. These mood-enhancing "feel good" neurotransmitters explain why some feel such an intense emotional connection to sugar. If you have lower natural levels of serotonin or endorphins then you might just be more vulnerable to sugar cravings. Eating sugar fuels your desire and makes you feel good after the release of the seratonin. Then....you crash and it starts all over again.

Rather than a handful of M&Ms after lunch I grab kiwi instead. Sweet and green so perfect for my challenge. If your Dopamine levels tank then you will experience seasonal affective disorder. Bummer! Dopamine is linked to the reward pathway of the brain. Let's lift our Seratonin and Dopamine levels naturally. I will stick to aromatherapy. There are many studies that point to citrus oils, specifically lemon and bergamot that have significant improvement in seratonin levels. I can attest to This and state that it helps me every time! You really need to get a diffuser machine and down citrus oils. Let me help you figure out the best way to do that.

i thought about what I could do to keep my birthday celebration clean and green. Matcha green powder to the rescue! I stirred it in with a bit of full fat coconut milk and then added maple syrup to sweeten it. Popped it into my ice cream maker and 10 minutes later I have a soft serve of green delight. Not sugary sweet at all with a creamy texture. Pure delight for vegans or anyone desiring a no sugar option.
you will need
- 2 cans of full fat coconut milk-I got mine at trader joes
-2 tablespoons maple syrup ( or honey ) to sweeten
1teaspoom vanilla
-2 Tbsp High quality matcha powder
optional add-ins like cacoa bits, nuts or seeds
mix all together in a vitamix or into ice cream maker or place in a bowl then freeze.

this is mildly sweet so if you have a sweet tooth you might need to amp it up with a few dates thrown in the vitamix. For me and my low sugar kick, it was perfect Nice Cream!

15 minute chard and tomato broth soup

Grab a bunch of red Swiss chard. Wash and dry it. Chop it all up into 2-3 inch pieces. Take a pan and add a few swirls of olive oil then cook 2 cloves of garlic until fragrant, about 1 minute. Add the chopped chard and stir. Open a 15 oz can of diced tomatoes and add the entire can including juices. Then add enough water or veggie broth to just cover the chard and tomatoes. Summer together for 15 minutes. Add salt and pepper to taste and red pepper flakes for a bit of heat. Toss in a rinsed can of chickpeas and heat through. Ladle into a bowl with a crusty piece of fresh bread and top with Parmesan or nutritional yeast and fresh parsley. Simple, hearty yet flavorful.

Hoping you are turning green from all this green food! My personal goal this month was to make most of each of my meals green. Why? Hey, why not! So I will continue to show you some of my simple meals or snacks that I have been eating.
Today I just swapped out bread for buttery soft Boston lettuce. I very rarely eat meat, like 2-3 times a year. When I do it is always either my mom's homemade "fried" chicken or my mother-on-law's chicken salad. Ooh and I love a good cup of hot homemade chicken soup.
i pan fry 1 LB of organic chicken thighs in olive oil. The soft and tender dark meat has tons of flavor. After cooked thru then cool and shred. Chop 1 celery stalk, a fistful of fresh parsley and stir into chicken pieces in a bowl. Add 2 teaspoons of Italian dressing (I use Newman's Own organic) and 1 teaspoon mayo. I used Vegenaise cause that is all we use. You can Grab the clamshell packs of Boston lettuce in the salad section of your grocery store. Stir all together and roll up in the lettuce for the perfect lunch.
