Did you know cinnamon comes from the inner bark of a small evergreen tree? The bark is peeled and laid in the sun to dry where it curls up into rolls known as cinnamon sticks or quills. Ceylon and cassia cinnamon come from two different but related trees.
Freshness is KEY. The ground spice loses its potency in a few short months while the sticks last about a year. You can also get high quality cinnamon essential oil which if undiluted and pure can last years. Obviously you want as much antioxidant benefit as possible so keep the pure oil on hand. I use and recommend one made by Young Living.
