Cauliflower Rissoto

​Comfort food, rich with flavor and texture!  Serve with a crisp green salad and a slice of fresh bread slathered in salty butter.  Warms your heart and belly.

Grate a head of cauliflower minus the woody stem. Or chop and toss in food processor to make fine grains of cauliflower. Save the unused parts in a ziploc in your freezer to make veggie stock!

Chop an onion (we like red versus yellow) and sauté with 2 cloves of garlic

Add that white wine baby. Pour a little in your glass and the rest in the pan. Ok, maybe just about 1/4 cup. Let it reduce to a thick paste of yum.

Add in those cauliflower bits. I was lazy/starving so a lot of chunks are thicker than a grain of rice.

Need to make it soupy with veggie broth so add about 1/2 cup.

Toast some pine nuts (1/4 cup) in a skillet while waiting! Add to the cauliflower, stir in a squeeze of fresh lemon and top with either parm cheese or nutritional yeast!

Most of our body weight comes from water. You have to replenish what your body discards on a daily basis! How much SHOULD you drink? Take your body weight and divide in half. You need that number in ounces of water...every day! Don't like water? Make fruit and herb infused water so it looks inviting and tastes great!

Granola, greek yogurt and fresh pomegranate seeds

Add a cup of yogurt of your choice and top with homemade granola and pom seeds. Instant smiles!
Granola recipe modified from The Kind Diet by Alicia Silverstone
 
Ingredients:
  • 6 cups quick cooking oats
  • 1/2 cup maple sugar or brown sugar
  • 3/4 wheat germ or oat bran
  • 1/2 cup shredded coconut
  • 1/2 cup salted sunflower seeds
  • 1 cup golden raisins
  • 1/2 cup canola oil
  • 1/3 cup real maple syrup (local if possible)
  • 1 1/2 tsp vanilla
Spread the oats on a sheet pan and bake for 10 minutes in a 350 degree oven. While that is cooking, mix all the other ingredients in a large bowl. Remove the oats from the oven and let cool slightly. Dump the oats into the goey mix and stir all together.  Spread the mixture evenly divided between two sheet pans and bake for 10 minutes.  Stir the mix about ½ way thru the cooking process.   Let the granola cool then store in an airtight container. Super cute to pop into a mason jar and add a jute tie or chalkboard label. Everyone loves a homemade gift!

The Base

An excellent start to numerous dishes you can cook and modify from here.  Start with the basics and the sky is the limit.  Grab your favorite veggies, chop and sauté and this all becomes the base to build upon.
4 carrots, washed, peeled and chopped 4 celery stalks and leaves, washed and chopped-orange, purple or yellow carrots 1/2 onion chopped finely 2 cloves of garlic, minced finely pinch pink Himalayan salt Sauté this combo (or make up your own) in olive oil until soft, about 8 minutes.  Add some red wine (1/4 cup) and a big squirt of Dijon mustard and you are on your way to having a delicious meal.  You can add pasta or meat or beans too as long as  you add veggie or chicken broth, then simmer it all until cooked thru knowing that length depends on what you added.

Fire Cider Elixir
a MUST for winter coming on.  Just a tablespoon a day will keep the doctor away so to speak.  It is a digestive tonic that boosts the function of your digestive system by creating a more alkaline environment  This in turn boosts your immune system.  Perfect for adults and older kids who can handle the burn.  It is called fire cider because it is quite warm as it goes down the esophagus. Make it at home or buy from me!
