My family loves peas. Perfectly round, bright green and sweet. I personally adore pea soup. Not the puke green pea soup served in cafeterias. Rather, a fresh and bright green bowl of perfection. I think most people have experienced baby food like consistency pea soup and that makes me want to gag. Frozen peas are perfect since they are picked at the right time then flash frozen. Add in frozen or fresh spinach for more dense nutrients that lend little flavor modification.
This soup takes mere minutes to prepare and is such a pretty color, texture and very satisfying. Optional toppings include fresh pea shoots, fancy olive oil and creme fraiche. I used Vegan creme fraiche that I made in about 3 minutes. Click each pic for directions.

I rarely am hungry in the early AM much less have time for a serious breakfast as I get my 3 kids up, dressed, lunches made and rush out the door for school by 7;30 AM. I start each day with either warm lemon water OR a shot of fire cider. Then after a bit I down a cup of green tea. I am a self-proclaimed tea snob so prefer to drink Japanese green tea. With all this liquid who could have room for a meal?
So a protein smoothie it is for me. I can drink it on the go in the car or at the first meeting of my day. Grab one of those super handy nutribullets for fast and powerful mix-and-go potential. I always include Dynamic Greens which is an awesome dense nutrient tasty powder. Not chalky at all. You need a clean protein powder. I use plant based ones or this chocolate one from Young Living is yummy. Then dump in 2 fistfuls of spinach. It lends no flavor and pulverizes leaving you a hefty dose of vitamins and minerals. Top off with plant milk (rice or almond), ice cubes and any nuts or seeds you want. I toss in a tablespoon of chia seeds and 3 dates for sweetness and a tablespoon of coconut flakes for flavor and healthy fat to keep me fuller longer. Whirl it all together. I LOVE my stainless steel straw and wooden lid from the MBC. This glass jar I got from my grandpa so it is old and still in circulation. This cold and filling refreshment can be a quick breakfast OR a snack when needed. YUMMY!! I consider myself healthy. I care about my physical and emotional health and I try to support my systems as best I can. I like to challenge myself too.
So this January I am going to do an "eat more green challenge". I decided I'm going to make the vast majority of each meal I eat be green in color. I have plenty of choices but will definitely have to preplan a little better or I'll cave. I'm putting this out there to hold myself accountable. That's what ya' gotta do sometimes. Anyone care to join me? Today's lunch was Ezekiel Bread with avocado, arugula, spinach, mixed greens, cucumber, pesto and vegenaise. Oh and a pinch of pink salt. Yummy! Make some goals that include living healthier and happier. Work towards creating a wellness lifestyle with simple and doable steps in the right direction. Lower stress, live in the moment, be healthier and find your inner glow.
