I consider myself healthy. I care about my physical and emotional health and I try to support my systems as best I can. I like to challenge myself too.
So this January I am going to do an "eat more green challenge". I decided I'm going to make the vast majority of each meal I eat be green in color. I have plenty of choices but will definitely have to preplan a little better or I'll cave. I'm putting this out there to hold myself accountable. That's what ya' gotta do sometimes. Anyone care to join me?
Today's lunch was Ezekiel Bread with avocado, arugula, spinach, mixed greens, cucumber, pesto and vegenaise. Oh and a pinch of pink salt. Yummy!
