Oh so pretty purple just begging to be eaten. I grabbed some purple potatoes at Trader Joes today. After contemplating exactly how to cook them in all their glory I decided chips were perfect. Crunchy and salty always win.
Slice to the thickness you want knowing thinner is crispier. Layer on parchment paper or oiled cookie sheet. Apply a generous coating of salt and pepper after tossing a dollop of coconut oil on them and massaging in. Pop in the oven on 350 degrees until crispy about 30 minutes or so. A nice earthy yet sweet potato flavor. I will be experimenting with these all week!
