Perhaps a bit of inspiration for your lunch or kids' school lunch. Here is what my 8 yr old had yesterday at school. Sushi (California roll), chips and salsa, mini babybel cheese, cut up apple and a chunk of French bread.
I have another kid that will eat any kind of soup every single day of his life, like 365 days a year. He gets soup, bread, a fruit and something crunchy everyday. I think he is easy to pack for but not my middle kid. He likes a variety and just when I think he is loving something, he gets sick of it. What do you pack for lunch?

Oh my yum. I whipped brussel sprouts up for dinner tonight. Soooooooooo good! I cooked them in refined (no flavor) coconut oil and a few garlic cloves in my cast iron skillet until they were browned. Then popped them in the oven for about 10 minutes. We are having pickle juice brined chicken breasts ( OMG you must try), collard green and green olive pesto (also amazing) and Brussels sprouts. Going green tonight!
Hair critters????? This is the time of the year for critters in the hair at school. YUCK! Nobody wants that. It is considered a public health nuisance instead of a communicable disease so the public school system cannot force kids to stay home from school because of it. That means you never know where you might "catch" them. Those critters start out as white sticky dandruff looking things on the hair shaft. Then before you know it if you look closely enough it seems there is a fruitfly looking friend living in your nest. We had them visit our house last year. I swear it was after visiting the movie theater. About a week later the kids were all really itching their heads and BOOM. So now I protect their precious locks with a homemade shoo fly spray. So far so good and takes me like 30 seconds to shake it and spritz on their heads before leaving for school. Happy September!
I have mentioned my love for Bok choy in the past. In fact, my whole family loves it. Yes, even the kids. I have my children's school to thank for that as it was served weekly at their lunch the kindergarten prepared together as a class. The teacher (the amazingly talented Lindsay Miles) would say that at the beginning of the year many kids would turn up their nose at the idea of a new veggie or method of prep. But with time and REPEATED exposure, they eventually come around. It becomes the norm especially when everyone else at the table is eating it without gagging and throwing a drama filled fit. Don't give up just because you or your family thinks something is yucky, prepare it a different way and keep at it. I can very quickly wash, chop and sauté Bok choy and have it on the table in minutes. I will cook it first in a bit of organic refined coconut oil then add a dash of sesame oil at the end. It really deepens the flavor. I also add a hefty swirl soy sauce for that salty yum our tongues love. Lastly my family tops many veggies with Gomasio. It is a yummy mix of salt and sesame seeds. It looks pretty, adds a bit of crunch AND in comes that salty flavor most kids will eat. This can make a great side dish or I will add an egg for breakfast or a side of chicken for the kids for dinner. Sometimes we pick at it before we even sit at the table! |
