I was so inspired by a pic on instagram the other day. A sheet pan of roasted veggies. Simple. Clean. Pretty. AND....you can eat it off the sheet and have one dish to clean. I hate doing dishes. Ugh, they pile up in the sink and haunt me.
I had to try it so I opened the fridge. We had an almost past it's prime rubbery cauliflower, a bag of Brussels sprouts, carrots and kale. Done. I sliced them all up and tossed them onto a parchment paper covered sheet pan. Well, all except the kale cause it won't take as long to cook. After adding a couple of blobs of coconut oil I stirred it all and popped the pan into a hot 350 deg oven. After folding some laundry and helping the kids with homework(45 min) it smelled so good. I tossed the kale into the mix and kept roasting another 5 minutes. DONE! The kale just gets crispy enough to offer a crunch next to the semi soft veg. And to top it I used my favorite lemon kuzu sauce from Trader Joe's, a drizzle of hemp or olive oil plus a few shakes of gomasio. For a pop of color and sweet little balance I tossed in pomegranate jewels. They are starting to get really sweet about this time of year!! It was so good we devoured it. And simply so easy. Give it a try!!
