I have mentioned my love for Bok choy in the past. In fact, my whole family loves it. Yes, even the kids. I have my children's school to thank for that as it was served weekly at their lunch the kindergarten prepared together as a class. The teacher (the amazingly talented Lindsay Miles) would say that at the beginning of the year many kids would turn up their nose at the idea of a new veggie or method of prep. But with time and REPEATED exposure, they eventually come around. It becomes the norm especially when everyone else at the table is eating it without gagging and throwing a drama filled fit. Don't give up just because you or your family thinks something is yucky, prepare it a different way and keep at it. I can very quickly wash, chop and sauté Bok choy and have it on the table in minutes. I will cook it first in a bit of organic refined coconut oil then add a dash of sesame oil at the end. It really deepens the flavor. I also add a hefty swirl soy sauce for that salty yum our tongues love. Lastly my family tops many veggies with Gomasio. It is a yummy mix of salt and sesame seeds. It looks pretty, adds a bit of crunch AND in comes that salty flavor most kids will eat. This can make a great side dish or I will add an egg for breakfast or a side of chicken for the kids for dinner. Sometimes we pick at it before we even sit at the table!
