Hoping you are turning green from all this green food! My personal goal this month was to make most of each of my meals green. Why? Hey, why not! So I will continue to show you some of my simple meals or snacks that I have been eating. Today I just swapped out bread for buttery soft Boston lettuce. I very rarely eat meat, like 2-3 times a year. When I do it is always either my mom's homemade "fried" chicken or my mother-on-law's chicken salad. Ooh and I love a good cup of hot homemade chicken soup. i pan fry 1 LB of organic chicken thighs in olive oil. The soft and tender dark meat has tons of flavor. After cooked thru then cool and shred. Chop 1 celery stalk, a fistful of fresh parsley and stir into chicken pieces in a bowl. Add 2 teaspoons of Italian dressing (I use Newman's Own organic) and 1 teaspoon mayo. I used Vegenaise cause that is all we use. You can Grab the clamshell packs of Boston lettuce in the salad section of your grocery store. Stir all together and roll up in the lettuce for the perfect lunch.
